Yeah, those shorties are the only ones we can afford. The heads and tails are pretty close together, but that bit of flesh in between is pretty good.

Egg plant is a lot better if you can raise your own in a garden. The ones you can buy at the grocery are often too old a tend to be bitter. We like them same-day-picked, sliced, dipped in egg then dry bread crumbs and oven toasted with a little grated parmesan sprinkled over them.

They are currently $4.49 for a dozen large eggs at Aldi’s in Raleigh, NC. I’ve been buying them here on Friday’s and taking advantage of the $2.50 coupon that has currently been offered every Friday in the ibotta app. That effectively makes it $2 per dozen, which I can deal with.

And so would we, but our garden space is nearly nil. To much shade, too much tilt, and the soil’s a bit on the clay/acid side and rocky.

As to the bitterness of store bought, here’s AI take on a method we’ve used in the past.
" To remove bitterness from eggplant, the most common method is to salt the cut eggplant and let it sit for 30 minutes to an hour, allowing the salt to draw out excess moisture and bitterness; then rinse off the salt and pat dry before cooking."

But even at that, they don’t scramble to great, and my attempts at omlets flopped. :innocent: :grimacing:
