Not really. Induction is much better than gas in most measures.

Almost anyone who cooks a lot prefers cooking with gas. This is especially true with professional chefs. Most restaurants have gas ovens and grills.

It is important that gas appliances be vented. Even electric stoves should be vented to the outside. Who wants all of the smoke and steam to move around the kitchen and throughout the house?

I believe this is pretty universally true. Major reason is something an Engineer calls hysteresis. That is, there is significant lag time to start up and to cool down. A professional cook wants it now, and when done wants it off now! Regular electric stoves just don’t pass muster.

Another issue might be called spillage. There is a gap between your fire and your pan, and heat can easily be wasted. More true with regular electric burners than flat top ones. Anyway, there is an answer for that too and it is called induction! It was my dream to somehow get a propane line into kitchen until we discovered induction. Wife loves it, only she had to change her ways because when you turn it on, it will be hot real fast so don’t walk off lest you burn something up. If I had the gas I would not take it out, but since I don’t the induction will be just fine.

Now we are just keeping the propane outside for the grill.

I read an article about induction cooking. It explained that a new trend in kitchens is to eliminate the stove top completely. The induction cooking elements are built-in under the countertop. It is an interesting concept. I have never used induction cooking. I understand that it works well and that the cooking surface stays cool. I like that.

I am sure outdoor grills will be one of the next items under attack.

That may be the case if if they use natural gas. If they use propane, not so much, it’s considered a green fuel because it doesn’t emit the bad stuff like sulphur dioxide and methane. It’s a by-product of crude oil refining.

How To Cook With Lava

Important Note:
It is illegal to cook food in lava or remove lava from the Hawaii Volcanos National Park. All the activities shown on this page were done outside of the park boundries on the Puna side.

Step 1: Preparation

1 Game Hen or Pork Loin
8 Ti or Banana Leaves
1 Shovel and Gloves
1 2000° F fresh Lava
Spice the Game Hen to individual taste and wrap it in leaves, one leaf at a time.
Step 2: Prepare Oven
With a shovel you don’t plan on using again… gather a good amount of 2000° F Lava. Try to find Lava from a recent breakout, where the Lava is fairly fluid.

Once you have a shovel full, place it on the ground far enough away from the Lava field that you won’t worry about having to move it.
